You guys in the USA don't know how lucky you are. I've heard of '09's being bought for around $2500-3000. Over here (France) they have a odd mentality- if they paid €7000 for a new bike and now 10 years later the same bike new is €10,000, they want €7000 back for it! (Mind you, the UK's a bit the same.)
Earlier this year i paid €6800 for my '05 1200C and that was a good deal. Most similar bikes were selling for between €7000 and €8000.
At the time i was looking to buy, i saw loads of early '90's Sportsters for sale and most were around €6-8000. Madness.

I think all carbureted bikes will increase some in value over the years if they are taken care of. That applies to any brand. I bought my 2006 1200 specifically because it has a carb. I would never consider an EFI bike. I want to ride a motorcycle, not a computer on wheels. I also own a 2013 Royal Enfield, which came with EFI. I bought it new, and actually removed the retrofitted EFI and installed an Amal carb with a kit from a RE parts place in the UK. I own 2 50+ year old cars. The value of pre emissions pre computer vehicles is starting to go up. Not necessarily as collectors items, but because enthusiasts want something they can actually work on.

They will increase in value but it will take about another 30-4o Years before they will bring any real money. Look at 57-69 sportsters. Original ones now are 12-15000 on average. About 8 times what they sold for new. So, I would say enjoy it. 401K or Roth would be much better for an investment.

As far as I am concerned all modified Sporties are collectables.
Each one is unique in it own way because each bike was customized
to the owners likeing so in my opinion no two are the same.

For me it has to be first era of Sportster, the four speed Evo Xls. Sand cast cases and heads, carb, torrington cam bearings, replaceable tappet blocks, chain drive.......and dare I say it nimble handling as a result of being the lightest era of sportster.

I think the older ironhead Sportsters in completely stock condition will always worth the most. Modified vehicles of all types have always proven less desirable. I don't see any EFI Sportsters ever becoming collectable. They are not "pure" bikes. They have all kinds of electronic emissions crap on them because of the EPA.
