when they machine the groove, it is done on an elliptical ramp and the gear stock held at set angle say 45* or whatever. youtube should have a vid of the process so measuring with the protractor might not be correct since there are more than one angle to the cut. there are diff ways depending on equip involved.

That's why I say I don't have the right tools.
There are different cuts in the tooth face from top to bottom.
It is suppose to smooth out movement as I read.
It's not hypoid but rather helical.
(at least that's what I see)
Different (helix) angles are available. 45 degrees is the most popular.

I'm having trouble seeing the helix angle. It looks to be about 27 degrees but this is a worn gear.
There is no standard as I have read also.
These can be cut to spec.
This is my rendition of an illustration using a piece of paper rolled around a tube.
(recreated from this PDF https://nptel.ac.in/courses/112106137/pdf/2_11.pdf)

edit:
From the link above:
The helix angle is always measured on the cylindrical pitch surface and the value is not standardized.
It ranges between 15 degrees and 45 degrees.
Commonly used values are 15, 23, 30 or 45 degrees.
Lower values give less end thrust.
Higher values result in smoother operation and more end thrust.

The angles may not be worth measuring on this old gear.

Keep in mind, this is all new to me.
But when looking for an alternative gear, I'd think these things need to be considered.

Cool video.
That jig is nice with spacing between the teeth already figured and built in.
