I have been riding Harley's since the late 70's. I have always liked more power & Torque out of them as how they all came stock was boring !!
I also enjoy going to the track with my bike. I have owned a few big twins & a few sportsters. the sportster suit me personally as they are lighter & handle well.

I'm in process of turning my 2003 XLH1200 into a 1450 (88") & using late heads like your motor has. I needed parts contacted Hammer & I am very happy with there very knowledgable & helpful service & advice.

With most Harley dealer's they just sell Harleys but are not into hi performance tuning or hi performance engine building. they would mostly just sale you SE parts. they would just blame you if what you had them do did not work out as you planned.

Like others here, I would say contact hammer.

Please let us know how you go.
A 1250 or 1275 built bike is my choice, turbo if you like hair dryers.
A bagger or couch is good too, but then again, I like mopeds and fat girls, mmmmmm.

By the sound of it, it's a waste of time talking to that dealer about anything much.

I have to one plus the talk to Hammer
I built my last sporty with them and it was a fantastic build, we went big and I used it for track fays for 5 years.
My current 48 I wanted to keep the bore and compression stock and he spent a great amount of time with me for a much simpler build. They have the engineering down and will explain it to you so you know what is going on.
Top Notch Customer Service.
