start it at 2 turns out and turn it in a half turn after starting it and see where your at.as long as the carb is really clean you will be very happy with a turn and a half but even happier if you need to lean it out just a taste more.but dont lean it out too much or the ping will be back.throw some new plugs in it also gapped at 35

Don't go by the number of turns.
Counting turns is just a starting place.
Adjust the mixture screw for the highest idle.
Set your idle speed down to 1000.
Now adjust the idle mix again for highest rpm.
This must be done with a hot oil tank, or the idle will be fairly high and likely rich when hot. Carb adjustments made on a cold motor will usually result in blackened plugs and poor running / starting warm.
An S&S carb has a conventional Idle fuel circuit and the mixture screw controls fuel not air like a Mikuni. The mix screw on an S&S carb is very sensitive 1/8 turn is a significant change.
Generally I set the mixture screw a touch to the lean side of best, This is called "Lean Best" and will provide clean plugs, good starting, good mileage and crisp throttle response with the right low speed jet.

Now you can make note of the number of turns on the mix screw for that carb on that motor with the that float level, ignition tuneup and exhaust (is huge).
Any of these factors (and others) can affect how many turns on the mix screw is needed for the correct fueling.
Lean Best may be a starting point depending on your setup, I base that on an optimized and not compromised setup.

Default Pinging corrected

Thanks for the tips everyone. The ping seems to be corrected now, and it was probably the final drive chain. I had it tightened enough to prevent it from hitting the frame. But it turns out that it was still just loose enough to tap the top of the sprocket housing on the transmission. (I discovered two faint grooves on the inside of that housing caused by the chain hitting it.) A little bit tighter and the ping seems to be gone.
