I did a search but did not find anything specific to Roadsters.

Widest one that will go on your 19" rim, without modification, will be a 110. You'll still need to deflate the tire or remove the fender to get it on past the fender nuts.

That'd be because the Roadster had the exact same rim, fork*, and fender as most Sportster models. The widest tyre that'd fit on a Roadster would be the same as the widest tyre that'd fit on any Sportster with a 19" wheel.

*: except for the dual brakes, which is irrelevant.

Oh ok. I seem to see more 21” wheels. Are people just changing them to 21s? I’m new to Harley’s so forgive my ignorance.

The Customs (883C and 1200C) had 21" wheels. All others had 19" wheels.
