Most rides days will offer "classes" for different levels of skill/bike etc. They will normally only allow you in "slow" for your first session no matter what.
Most also have rules about not passing i the corners for slow and medium classes. It's not for racing or racers.

Bikes. I have run my 73 H just for fun. On the original tires to make it interesting for me. These are by no means race bikes but it's fun anyway.

I have seen quite a few MX bikes turned into road racers, The are light and have fairly powerful engines. Tires are super important on these and the front brakes are generally not up to the task. But Bultaco's ruled the 250 class here for years.

F.W.I.W. “Sprink” and myself did a few “open track days”, classes and track sessions, not racing. Learned more in a couple days then 60 years on roads. Grattan Raceway, outside of Grand Rapids was a blast. When we’d come through the esses behind the pits most everyone was at the rail watching, and coming into the front straightaway they’d all be out of that rail as well. Only Harley’s that showed up and we had many comments about how great they sounded at full song. Any chance you have to get some track experience justdo it! You’ll never regret it!

I spent 30 years trying to get my older brother out on the track with me. He was always telling me how "fast" he was and that none of his riding buddies could keep up with him.

Finally got him to Lakeside for a ride day. The track is The Truth Teller.
