Yep, we butchered our own hogs up until about 10 years ago. Now I about the only one in the family that knows how, and I am too old and crippled up to do it. Now if somebody hits one on the road or shoots one, we usually just skin it out, quarter it up, and chill it. Then take the good cuts and leave the head, chitterlings, and hide. My sister can still skin one, but she needs me there to cut it up, and wrap it for the freezer.

I do remember the long days butchering 5 or 6 hogs, making head cheese, and rendering buckets of lard. Most times ate too many crackings and couldn't sleep that night.
