Default Advice needed for Mikuni HSR42 install

I just got my Mikuni carb installed, also did a cheapo 2 into 1 pipe. Had a forcewinder air cleaner on the old CV carb, it's on the Mikuni too. The bike is an 01 883 converted to 1250 with stock cams as far as I know and no headwork.
The bike is running lean, I'm just looking for a recommendation for jetting.

Do you have the same or similar combo? If so what Jets are you running?

Here's the tuning guide at the Mikuni website.
http://www.mikuni.com/fs-tuning_guide.html

There is no one single combination of parts that is right for all riding styles. The performance requirements of a touring rider usually differ from those of the LTL (Light to Light) performance rider. A combination of performance components that delivers outstanding power ("Torque") in the middle range (2,000 to 4,000 rpm) seldom does as well above 5,000 rpm. The drag racer usually could care less about what happens at 2,000; his/her concern starts above 4,000 or so. These divergent requirements are best served by somewhat different combinations of parts.

Good starting point is a 25 pilot, 97 needle with the clip in the middle groove and a 165 main. But I would go bigger on the main til the rest of the circuits are done.
Depending on which version of the hsr42 you got the pilot is either a 20 or 25. The needle is 97 and the clip in the 2nd or 3rd(middle) groove. Main is either a 155 or 160.

Why do you think you're running lean?

It's popping every time I let off the throttle. Honestly, I didn't check the jet sizes before installing the carb, and it's so much fun to ride, I haven't pulled the plugs or checked the jets yet. That's my plan for this week, figure the jet sizes and check the plugs. I'm just curious what others are running

Check for air leaks first. I'd be surprised if the stock jetting is that lean on your motor.

Popping on decel is not completely indicative of a lean condition. I ran a 2-1 on a base 1250 conversion with W and N4 cams. Decel pop was normal with a clean tune in the carb. If I fattened up the pilot circuit it would go away, but my idle afr was very rich.

Ok, I'll look into it more. I know there's no intake leaks, when we first got the Mikuni on I sprayed the entire intake area with starter fluid and had zero increase in revvs from the idle.
It's possible that there's an exhaust leak, not sure how I'd test for that. Soapy water?

Its normal to hear popping on decel with aftermarket mufflers and/or exhaust. Is it really extreme / excessive? Any leaks in the exhaust will make it worse.

How do the spark plugs look?

It could be a lean pilot circuit, but there should be other symptoms with it.

Is there any hesitation, carb “farts”, or light throttle detonation?

I figured out the first issue: the Harley choke cable isn't asking properly. I've ordered a new Mikuni one, and then we'll look at it.

As for the other questions, I pulled the main jet, and it's a 160, which is what it should be. The intake and exhaust have no leaks, and the plugs are BLACK. I put new plugs in, and I'm gonna do another hundred miles before messing with it more. Make a change, check the effect of the change, make another one. I don't want to do eighteen different things to find out that it was just this choke cable
