Default normal heat or overheating engine

I just picked up a 97 xl1200 sport and just road it to my local HD to pick up some small parts. Something I noticed very quickly is that this bike gives off some serious engine heat.

I should note that I have the Paughco upsweep drag pipes and S&S super E carb with a Thunderjet. The previous owner wrapped the pipes but didn't install a heatshield. At traffic lights, my calf sure does feel the heat from the pipes, but the engine itself seems hotter than normal...or at least hotter than my previous sportster. After a 40min ride (mostly city riding), both the primary cover and gearcase have a good amount of heat coming off of them. Oil temp gauge read 198.

I cleaned the carb and re-tuned it. So far, the sparkplugs show it appears jetted correctly, but I should ride more to really determine that, but no backfiring or lost of power.

I'm curious if perhaps the PO used the wrong weight oil for sportsters, so I did an oil change with mobile1 20w-50. I'm sure its not the sole reason its hot, but figured it wouldn't hurt.

I'll admit, I'm still learning the ins and outs around sportsters, so maybe all this heat is normal. But like I said, this bike seems to give off more heat than my last. I don't remember such heat coming from primary cover and gearcase.

Since the oil gauge read 198, I'm assuming the oil pump is working properly. Besides the drag pipes not having a heatshield, what could be causing such heat, or is this completely normal and I should just put up with it?

I don't know if this is a sign of anything, and I hope this doesn't throw off any ideas. But after reaching riding temps, when I shut the bike down I get a weird scent of something burning that seems its from the exhaust.

Of course, the primary oil is separate from the engine oil... the engine oil temp is on the dip stick...

Did you check the primary oil? Did you check the primary chain adjustment? Is the clutch adjusted correctly & not slipping?

You don't have your location indicated - What is the ambient air temperature in which you're riding? City riding? Countryside? Average speed?

What's your riding position? Forward over the tank/engine? Upright?
Footpegs mid? Forward? Rearset?

I just got the bike Monday, so I am going through those checks. But I did get Formula+ primary lube and plan on changing that as well. I'll check chain adjustment and clutch (doesn't seem to slip though)

I'm in Brooklyn, NY, though I avoid riding in manhattan as much as possible. It's currently in the 70s and crappy city traffic from time to time. Average speed would be 25-35/40 depending on traffic. (at the time of experiencing this heat, I was on the highway along with some city riding)

Oil temp is good. Engine oils oil are meant to run at 200 F measured in the tank or sump. If your part throttle jetting is a bit lean you will have heat pouring off the pipes. Highest exhaust temp (EGT) is with a 14.6:1 AFR. Richer mixtures bring down exhaust temps along with running better. Probably why the PO wrapped the pipes. Might look under the wrap and see if you've got a mess...

Measured by the sensor in the rear cylinder head on EFI Sportsters. 300 - 360 is normal. 410+ is consider hot. Way different from oil temps taken in a sump or oil tank being referenced in this thread.
