Really sounds like it's lean. The spark plug seems to be confirming that. Too white. Should be very light tan. Check the float level & petcock. To me, it looks like it's leaning out at WOT in the upper rpm range because it's not getting enough fuel. Bigger jets won't help if there's not enough gas in the float bowl.

The Mikuni HSR42 flatslide carburetor delivers extremely crisp throttle response while providing an unrestricted bore for maximum flow. Maximum flow allows your engine to reach its full potential so you can accelerate and pass with confidence. An HSR42 carburetor kit bolted onto a standard Harley Twin Cam used with a Screamin' Eagle air cleaner will ADD 25% more horsepower over stock. Maximum horsepower is increased from 57.8HP to 72.2HP and torque increase from 71.4 ft.lbs. to 80.7 ft.lbs.

Have you checked the needle jet for being clear?
Sounds like it's got to be something related to those parts.

Double check that you don't have an intake manifold leak. A leak there will leed you to think you need jets that are way too big (48/190).

Well its possible IF they did an exhaust system at the same time.
Certainly not all the Mikuni
