But when I talk to people I know and online who own ironheads, they have paid less. I'm trying to understand the market.

I have seen 1971 Sportsters sell for over $10,000. They were restored to original condition, nut and bolt restorations. Not a custom job that someone calls "restored."

Hence, "excellent" conditon.

I paid too much, $1500, where it fairly would have gone for $800 if I hadn't been star-struck and the seller hadn't been ignorant of the internals and his PO hadn't been a dick and HIS PO hadn't been another dick.

Here's what you do. You buy one. Maybe you'll score it, maybe you'll pay $100, $300, $500 too much. But you'll have it.

I just scored a running, non-smoking 1970 motor. You get in the community and in a little while you'll get in with guys with parts piles that'll even you out if you overpay a little.
