The answer is - get a shovelhead! My '07 XL doesn't really talk. My '81 FX does that "potato" idle thing. My 1950 FL says "lick a chick, lick a chick, lick a chick...".

I recently completed a stage one upgrade. I used an Arlen Ness "Big Sucker", fuelpak, and Vance and Hines "Short Shots.
I had the stock pipes with Python 3" slip on and just this week put on a set of Short Shots what a difference. I would say it's more of a whap whap whap than a potato potato potato. It is twice as loud as the slip ons and is very throaty. The bike HAULS ASS!!! I can't see going to stage 2 as I would probably get myself in trouble.
I highly recommend the short shots for that "chopper" sound of the old school days. You do need to use something like a fuelpak though.

It's not a shovel, but if you skip to the end of the video, it's a pretty good sound coming from and EFI Sporty.

I wouldn't advise lowering the idle; you'll starve the top end of oil.

I tried a bunch of pipes on my last bike, but ended up just cutting out the baffles and using an aftermarket mini baffle. I liked the sound without it being obnoxiously loud.
I could also take out the mini baffle to give it a deep hollow sound.
My bike was a Sportster, but the procedure was similar to this:
