Can I fill tank all the way up and not have to worry about gas schlossing out?

I'd like to feel OK about filling to plate with overflow drain

Do you fill yours up this full?

Yes. Worst that can happen is if you fill just before parking it it can heat soak and puke a little out the overflow. I don't worry about it but some think the world will end if that happens...

In FL heat it might be a good idea not to park in the sun right after filling. But like Tomcatt said, it's not a big problem.

I fill mine to the max.

I always fill mine to where it is at an angle across the the hole in the plate (half above and half below the plate with bike on side stand). I am in Sunny Southern California, and this has never been a problem.

+1 Same thing I do. To max out your miles per tank you have to fully fill the tank. I have a +1" sidestand on mine so the bike sits more vertical which helps get a bit more fuel in. It doesn't seem to puke gas when filled that way but I try not to fill it just before parking it.

On my R9T the filler neck is removable and I've modded it to allow the tank to hold more fuel (less trapped air, more fuel) and it will puke a little given the opportunity.

Bikes with evaporative canisters can be problematic (canister flooded with fuel) but my Sportster didn't come with one and the one my R9T had is sitting on a shelf.

Out here in AZ sometimes gas stations are far and few between. When I fill, the amount of gas held in one float bowl seems to always flash through my mind. Then I think how long the bike will run when forgetting to turn the fuel on. Think of the distance you could travel in that short time and then think if you had to push that bike that far!
