Thanks for all the help. I ended up getting a 10mm and the 11mm because all indications were it was a 10mm/3/8 but JP cycle insisted it was an 11mm. I assume I should use whatever fits best.

I've got the master cylinder on there. The guy who put on the calipers says he used DOT 5 but it isn't purple (very green actually) and it didn't seem to repel water at all, so I am going to flush the entire system as soon as it stops raining. My question is whether it matters at that point what DOT I use (4 or 5?) I installed a hydroclutch on the other side that called for DOT5 and the new master cylinder is labeled DOT 5. I have no idea what might be recommended for the dual calipers, which I think are V-twin. I was just going to go with DOT 5 to stay with the MC label and avoid confusion.

DOT 5 will not attack paint and will not absorb moisture.

DOT 4 will attack paint, will absorb water.

DOT 4 has a higher performance rating, I believe.
DOT 4 will mix with 3.

I use 5 when I have a choice.

To test dribble 1/2 teaspoon or so of fluid into some water and see if it mixes or floats like oil. If it mixes its DOT4, if it floats like oil DOT5.

Do not mix DOT5 with any other type.
Flushing calipers or masters without disassembly will not prevent some mixing.
Best to disassemble and replace rubbers.
Flush hoses with brake cleaner, blow out with air.
