NO EVO,
It's a Different animal, not too many shops are supplying big IronJugs these days, Ron Trock was big on this as well as D&S Cycle but not sure these days, for more performance you may consider to stroke the motor, S&S still sells Iron Kits as well as 1000cc size (3 3/16) stroker pistons, I am half way there on a motor I have, you take the 1000cc jug and lower the oil drain hole, it's all on S&S Cycles Instructions, I am sure many will chime in. popular strokes are 4 1/2" or 4 5/8, 72 0r 74 cubic inches.
plenty for the street but you need to make the other components strong to take the power produced.

No Dis but for you to ask if an EVO jug can fit an Iron tells me that you need to learn a bit more about Ironheads, you already have the later cases that is an excellent foundation, I would suggest learning more and considering squeezing every inch out of the stock displacement, personally I like to strip a Sportster down as light as possible = faster bike.
Sportsters are not high reving bikes but you can create a beast with a strong mid range to redline with a good head porting, choice of cams, etc.. for the street it would be smart to compromise so you can have a strong bike that can also run on the highway... learn more brother before you spend the $$$$
