I'm happy to report that I had a successful Cardioversion Defibrillation procedure yesterday and was released from the hospital. I feel fine this morning, so it's back to assembling my bike.
I will be confronting the rear wheel assembly today. I may have to buy or machine a custom right-side axle spacer in order to center the wheel in the rear fork.

Mikuni size for your build

I'm not planning to keep the Mikuni carb for very long. I am working on adapting an aftermarket EFI system to the Sportster. That project thread is here.

Good idea to replace that Mikuni even if you elect to stay with a carb. That 48 Mikuni might prove to be too big a carburetor for your engine...most likely.
Just a thought.
A friend tells me this should prove to be a very reliable build that you have planned. He built one pretty much like it from a 2009 and said it was a solid, reliable engine.
Good luck. I can't wait to hear how it works out for you.

I finally got around to finishing the engine assembly. Here, I'm installing the Cycle Electric 38-Amp, 3-Phase Stator for the charging system. Note there are three wires that run to the Voltage Regulator instead of two.

Here is the stator after torquing the mounting screws and the wire retainer screws.

I am fitting modified XR1200X forks and triple-tree to my '03 XL1200H. The forks have Ohlins cartridges in place of the original Showa units.
