I'm quite pleased with the results. I don't have a lot of engine mods done, but I wanted to know where I was at and the bike needed some tuning.
72.8hp - 79 ft/lbs

I asked the guy what i should do next. Well, I asked him what was holding me back, and he told me the next step should be cams and a bigger carb.

I thought that you needed new heads to go with cams, but he said the SE bolt-in cams were made to work without new heads. Is this true? I might do the cams, but not too sure about a new carb. From what i've heard on this forum, the CV carb should get me pretty far. I think that a mikuni carb will be one of the last things i do.

Before changing the carb, I'd replace the S.E. AC
There are alot of air cleaners that are better flowing than the later SE.
People here haved talked about picking up as much as 6-7 horse when they remove or replace the SE filter.

After that, it depends on how much you want to spend.
You could do the heads and cams at the same time, but like your guy said you don't have to.
