Default New lifters, oversize?

I've been watching some of the conversion threads (and drooling) and thinking about doing some (more) upgrades myself.

Looking at Jim's catalog for their lifters, I notice that they offer lifters in oversizes (+.001” & +.0015”).

Why or when would you or should you be using an oversize lifter? Is it safe to assume unless you have a problem to just order the stock sized replacement?
