I use my hand. I do have a temp gauge. For years I would touch the tank with my hand then look at the gauge. It's to the point now that I can do it by feel and be pretty damn close. My problem is trying to figure out when they are no longer reading correctly. There have been a few times where it "feels" hotter than the gauge reads. I know with meat thermometers you can check the calibration by plunging it into a glass of ice water. If it doesn't say 32*, then it's off. Oil temp gauges only go to 50*.
